The macaron rose to confectionery fame in 16th-century France. This meringue-based, two-sided cookie delivers plenty of taste in addition to tradition. Amy Shippy and Laura Hale, owners of Marché de Macarons in Savannah, Georgia continue their successful collaboration that gives customers macarons that are not only pleasing to the eye, but to the palate as well. These pastry chefs believe in using the most natural and freshest ingredients possible. They start each batch by grinding almonds to make the lightest almond flour--the basis of the macaron. Amy and Laura are imaginative in their flavor creations. Flavors like cappuccino, salted caramel, vanilla bean, raspberry, chocolate ganache, Meyer lemon, key lime, bourbon pecan, and pistachio have become staples in their bakeries, while flavors like blackberry lavender, jasmine passion fruit, and about 40 others pop up in Marché de Macarons' pastry cases during the different seasons. The women have created approximately 50 flavors in their company's three year history. The owners' macarons have built a legacy of their own at the quaint retail bakeries in Southside, Historic Downtown Savannah and now on Hilton Head Island South Carolina.
